This product is a great choice for bakers seeking a flour with lower enzymatic activity. The lower enzymatic activity will allow the bread dough to sustain integrity over longer fermentation times (e.g. 24+ hour cold bulk fermentation or final shaped dough resting in a cooler for 14+ hours after 3-6 hour bulk fermentation at room temperature).

Central Milling recommends that you store this organic type 00 pizza flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. They also recommend that you store the flour in a sealed food-safe plastic container.
