For mega expression of grassy thiols
SAUVY™ was selected to help winemakers make New Zealand style Sauvignon blanc, but it does equally well in expressing thiols (passion fruit, citrus, grassy) of other varietals.

- In cooler growing regions, wines can be intensely grassy with high expression of 4MMP (grassy thiols)
- In warmer growing regions, wines express box wood/gooseberry and are balanced, crisp, and refreshing
- Helps increase the aromatic expression of less expressive grapes, especially Pinot gris
- Moderate rate fermenter with low to no production of H2S, SO2, and volatile acidity
