Primarily used for cleaning, citric acid is preferred by some winemakers for acid additions.  1 oz. in 5 gals. raises acidity by 1.8 g/L.

Citric is the primary acid found in citrus fruits.

In brew cleaning, citric is often used to neutralize sodium percarbonate.

Citric acid is also used in cheesemaking.
